In dire need of Chocolate

Its midnight on Friday and I’m blogging.. haha. Tonight I had a late shift at work and since we support investment bankers, we pretty much need to be available 24/7. So, tonight I was there from 2:30-11:00. It really just sucked. But I made it through and I wont have to do that for another 6 months or so.

After I had my pancake breakfast, I decided to go for a run around noon. I ran for about 30-35 minutes out in the sunshine in my humongous Cornell sweatshirt (my Dad and bro went there). It felt great to be outside during the daytime!

I showered and packed a quick lunch to bring to work. Right after getting to work, I sat down to a nice homemade salad:

  • A lettuce mix from Trader Joes
  • mushrooms
  • sugar snap peas
  • chopped carrots
  • handful of almonds
  • whole pack of Sabra hummus mini
  • drizzle of Annie’s Raspberry Vinaigrette dressing.

It was so great!

By 8pm I was about to eat my arm off and knew I had to order dinner asap. I scanned SeamLessWeb and searched the 350+ restaurants that were “open for delivery in my area”. Jeez Ny!

I had no idea what I wanted and seriously debated and searched restaurant menus for almost 45 minutes and then started getting really cranky. I was SO hungry. I knew sushi delivered quick so just chose the fastest sushi delivery place and went with it:

  • House salad with ginger dressing
  • Edamame
  • “Garden Roll” – i think this had avocado, tomato, cucumber and like a ranch dressing
  • Salmon Cucumber Roll

I shoveled this food into my mouth as soon as it came and it left me with a horrible stomach ache. I dont think it was very good sushi and the edamame had so much salt and I think it just threw my stomach off :(

The rest of work was pretty painful. But it did go by pretty quick because I was super busy. When I finally got home at about 11:30, this chick needed some chocolate.

This is some type of dark chocolate from Whole Foods. I forget the name of the bar.

Anyway, I hope you are all having a much more fun Friday night than I did! Tomorrow I am working out with a friend at 10, then meeting up with my parents and some of our family friends in the city. Then out out out on the town… can’t wait!

Back to Back Posts

I mean I figure why not? I just posted a two day recap of my trip to Mississippi but I also just ate Pumpkin Pancakes and might as well show you those now instead of waiting for lata!

I am stilll sitting in Cafe Orlin just blogging away. I ordered their Pumpkin Pancakes with Cinnamon Yogurt and a strong coffee.

To.Die.For. Doughy and hearty. AH!

I ate about 2/3 of this dunked in maple syrup… I am now going to get packed up, walk a block home, chat with my rooomie and catch up a lil’, go for a joggedy jog and then get my booty over to work (workin today 2:30-10:30)

later skaters!

Ahhhh finally I have time to blog!! As you may have read before, I traveled to Mississippi for work on Wednesday and I flew home late last night. It was a hectic trip and included 4 flights in almost 24 hours! Gah… the qualms of being a traveling consultant. But its all good! I am home now and in a cafe blogging after eating pumpkin pancakes :) But let’s backtrack…

–Wednesday–

I started off my day with a 23 minute stroll around my neighborhood as soon as I woke up. I try to get some movement on days when I am flying because I know I will be sitting for the majority of the day. I rolled outta bed, threw on some sweats, plugged in the ipod, and just took a brisk walk around the East Village for 23 minutes.

An orange and coffee were my breakfast on the go… light.. .but it kept me feeling good. I dont know what it is but I just really like having a light breakfast these days!

Lunch was one of the BEST salads I have ever put together at the deli:

  • Spinach
  • Mushrooms, tomato, cucumbers
  • a TON of avocado (at least 1/2 a cup.. the guy really loaded it on)
  • Balasamic Vinegar
  • A couple of big scoops of hummus
  • About 3/4 cup of brown rice from the deli… I am a genius for thinking of this! I bought a side of rice from the grill section and just simply added it on top of my salad once I was back at my desk. I love discovering new options at the deli (because I have to eat there each day for work… they give us $8 lunches for free everyday)

On the side, the rest of my Synergy Kombucha

Lunch carried me through the rest of the afternoon which included shlepping my crap to the airport, getting delayed into Atlanta, then again delayed into Mississippi. We grabbed dinner in between flights:

Au Bon Pain was the best choice in Atlanta. The others included Sbaaro and Chinese Food. Nooo thanks. I ordered the Caprese Sandwich which included a whole wheat baguette, tomato, mozzarella and pesto:

I ate most of it but left one piece of the top layer of bread.

On the next flight, I snacked on a bag of cut carrots that I had brought (this bag was initially full) and about 1/2 of those almonds you see.

Sleep sleep sleep…

–Thursday–

I woke up and after some debate (sleep? blog? workout?) I decided to go to the hotel gym for 20 minutes. Short and sweet. I did the elliptical and it felt jolllly to sweat. I think what motivated me were my GOALS in the back of my head (20 minutes of exercise at least 4 times this week).

Breakfast was at the hotel and let me tell you, there were hardly any healthy options. Biscuits, gravy, cheesey grits, homefries, etc.

I was pretty dissappointed but was able to figure something out:

coffee with REAL cream, a big apple, and a small bowl of oats with walnuts.

Meetings with clients took up the morning and we had lunch at around 12:30. Hillary knew of a good place she had been to before with pizza and salads.

I ordered the Mediterranean Pizza which had mozzarella cheese, peppers, artichokes, goat cheese and pesto. On the side, a house salad with croutons and balsamic vinaigrette on the side.

I’ve been into trying to really listen to my body lately and therefore only ate 2/3 of the pizza, all of the salad with only a few croutons.

This combo kept me feeling full but not groggy because I didn’t eat the whole thing and therefore it wasn’t weighing me down.

There were NO options, literally NO options for dinner at the mississippi airport. There was only a newstand! What?!? Thankfully, I had packed a LaraBar, so my dinner started off with that:

And desperately ended with the rest of my packed almonds, and an apple I was able to grab from the stand.

When I got home at midnight, I snacked on a piece of Pumpkin Cornbread and some baby carrots.

I think I have been spoiled by usually traveling through main airports for most of my life. Since I went to college in atlanta, I always just went back and forth from NY to Atlanta when I was traveling home or to/from school. I thought that finding healthy options in an airport was no big deal. However, since I travel to some really random locations for work, I have had less luck lately with having any availability of healthy food at the airports I am at.

This trip, I packed carrots, almonds and a LaraBar and they really did save me. I was able to piece together meals and feel good about them.

Anyway, today I work from 2:30-10:30 (yea friday night, but I get paid $$$ for doing it so its worth it one time!). I am currently blogging from Cafe Orlin  and just finished some PUMPKIN PANCAKES. Pictures to come later… I hope everyone is having a wonderful Friday!!

Gooooood evening! How was your day today? I had a really good day and it all began with a special treat:

Coffee from the MUD TRUCK! The Mud Truck’s slogan is “Gourmet Street Coffee” and it is a big orange truck parked near my apartment that serves coffee and a few small breakfast items. I have never once stopped for it but always thought I would buy it on a special occasion. At work, they have Starbucks coffee for free, so I always thought it was silly to buy this. But today, I declared it a special day and bout a medium $2.25 coffee. It was totally worth it! A smooth flavor to start my day off.

I bounced into work with a smile on my face and a Honey Crisp apple in my bag, waiting to be eaten. I let my stomach just enjoy the coffee for a couple of hours and then finally had a small but pure breakfast of this apple. Sometimes, fruit is all I crave for breakfast. I feel light and energetic with the coffee + apple mix.

I broke for lunch at around 11:45 and went to the deli. At the grill station, I put spinach, mushrooms, onion, tofu and brown rice together and they sauteed it in a small ladle-full of soy sauce and teriyaki sauce. It was slightly too salty for my taste but still great.

I also splurged and bought the Synergy Kombucha Tea. $4.99!!! Yikes. But I was just in the mood! I sipped on about half throughout the afternoon but saved the rest for tomorrow.

The afternoon flew by and I decided to put on my sneaks and walk home. I speed walked about 40 minutes home and it felt fannntastic. And I felt numb. It was a cold one tonight!! I yakked on the phone to one of my high school best friends Katie, my Dad, and listened to some tunes.

Soon enough, I was home and ready to prep a dinner of leftovers.

From left to right:

  • 1 piece (plus I snacked on another) of last nights cornbread + 1 piece of pumpkin cornbread I had made a while back
  • Green salad with mushrooms, a drizzle of Raspberry Vinaigrette and a glob of Sabra hummus
  • Leftover veggie/lentil/bean soup

I kept dinner light because I had THIS to look forward to….

Peanut Butter Puffins!!!! I made a pit stop on the way home to grab these guys.

My new dessert: Peanut BUtter Puffins, a banana, almond milk, carob chips, small spoon of almond butter.

And I can’t stop at just one.. come on now!

A little more… 1/4c oats, puffins, carob, almond butta.

Satisfied!! I watched last nights Gossip Girl which I thought was nice and dramatic, and caught up some more with my Dad. He called me again to specifically ask for my blog URL. hehe :) Hiiii Dad!!

Tomorrow I am off to Mississippi!! I am visiting some clients on Thursday and then fly back late Thursday night. Shalll be exciting. I am going to try to get up to go for a walk in the morning and need to remember to pack some healthy snacks for the trip.

Anyway, I am going to publish and then hit up your blogs for a mad commenting session.

Night!

A Dinner of Cornbread

Hi! How is everyone today? Its been interesting getting back into the swing of things after Thanksgiving. This is going to be a fast post because I am exhausted. I only slept one or two hours last night. For some reason, I just couldn’t sleep although I was SO tired. This hardly ever happens to me but when it does it just plain old sucks!!

Anyway, I knew that when I woke up on 2 hours of sleep I needed something to jolt me. Coffee and I dont mix well after a bad nights sleep because it makes my stomach hurt. So, I went to this place called Liquiteria which has fresh squeezed juices and is a known health store in NY.

I got some type of muffin made with berries and yogurt and topped with powdered sugar:

And “The Killer”- made with apples, ginger, lemon and a “health mix” which includes ecchinachea and other nutrients that help ward of any sickness.

I felt ok throughout the morning and had an awesome salad at lunch:

In the mix:

  • romaine
  • tomatoes, mushrooms, cucumbers
  • baby mozzarella balls (yum)
  • avocado
  • corn
  • you see light ranch dressing but i didnt use it at all- instead I used leftover AMAZING hummus. I used 3 or 4 large scoops as dressing.

For a snack, a granny smith plus TWO packets of Justins almond butter.

I treated my tired self with a cab ride home from work today instead of taking the subway and let me tell you, it felt like luxury!! Ahhhhh.

Once home, I hooked up some cornbread that I had been thinking about all day. I followed this recipe. but used almond milk instead of skim milk and brown sugar instead of white.

I also snacked on some carrot sticks with salsa while cooking. Once this was all ready, I just didn’t want the leftover lentil/veggie soup. I warmed it all up but then just wasn’t feeling it. I just wanted cornbread! So, I put away the soup, and had another piece or two of cornbread (yeah a lot) with some light butter on top. Annnnd thats that… cornbread for dinner :)

For a healthy dessert alternative, I had a small chopped banana, a little Kashi cereal, almond milk, a dollop of almond butter and a few carob chips. I think I found my new ice cream substitute!! This was awesome and MUCH healthier than processed froyo and Ben and Jerrys. I am very excited about this!

Ok annnnd the eyes are literally closing. Hope everyone had a great Monday!

Hey everyone! Well this fun filled weekend is finally coming to an end. I am going to catch you all up on my eats for most of the weekend, although I have to admit there are some holes in my pictures yesterday.

I didn’t take my computer home with me over the weekend (wanted to disconnect from work!) so it was difficult to post. But have no fear I am here now! :)

Saturday morning started in attempt to be somewhat healthy after an indulgent couple of days. I had 3 egg whites + 1 runny egg with mushrooms and laughing cow cheese. On the side, two pieces of 100% whole wheat cinnamon raisin toast, one with a little Brummel and Brown butter and one with Better N’ Peanut Butter and Apple Butter. And some blooobs!

It was my Dad’s birthday and he really wanted to go for a walk on the beach. It was a GORGEOUS day out and we had a great time roaming around on the sand and rocks. It was a fantastic idea! Love ya Dad.

Once home, I snacked on leftover homemade butternut squash soup, some veggies, hummus, and three (one went unpictured) mini cornbread muffins.

We then went to my Aunts house where all of my cousins were. There, I ate 1/3 a bagel with cream cheese and smoked salmon.

After relaxing for a while, we went to a restaurant called Rebecca’s for my Dad’s birthday dinner in Greenwich, CT. This restaurant is one of our favorites and never disappoints! Rebecca herself is always there ready to greet you when you walk in and it is just a really cute cozy restaurant.

I didn’t even take my iPhone with me and wasn’t planning on getting any pictures because I knew it would be dark and my phone doesn’t have a flash. But when I ordered this, my sister insisted that it be on the blog and she took a pic with her blackberry since it has a flash. This is a 9 raw vegetable salad with vinagrette and look at the presentation!! How cool is that???

I also ate two small rolls with a tad of butter, another appetizer which had veggies wrapped in a croissant-like bread, and homemade ice creams for dessert!! It was yet another indulgent night but I felt ok afterward.

—Sunday—

This morning I hopped out of bed at 8am and knew that I wanted to have a super healthy day. My body wanted it!

I ventured downstairs and made a quick breakfast before getting ready to take the train back to NY. I had about 3/4 cup fat free cottage cheese, blueberries, raspberries, cinnamon, water, and coffee.

Then I got my stuff together, and trained it back into NY. Once back, it was about 12:15 and I was ready for some lunch! This is a bowl of leftover lentil/veggie/bean soup.

Before I even got on the train, I dressed in my workout clothes and sneakers so that I had no excuse not to get some exercise in! After lunch, I plugged in my ipod, and went out for a stroll on the sunny Sunday we were greeted with in NY. I speed walked for about 20 minutes before beginning any of my errands.

I ended up near Union Square, and cooled off with a Venti Passion Iced Tea (unsweetened) from Starbucks.

I strolled around thinking about how much I love living in NY, taking in all of the scenes:

This is all sand art! This guy just makes these huge sand art displays on the ground in the middle of union square. It was so cool to watch!

And then The Gap put on a show! They had about 10 people come out, some were dancers and some had instruments and they put on about a 20 minute show filled with dancing, gymnastics, singing, etc. Between this and all of the super cute Gap commercials lately, it seems like Gap is realllly trying to make a huge marketing push. I think they are doing a great job so far. Have you seen those Gap commercials with all the little girls talking about their boots? So adorable!

I also got a coffee while I was walking around in order to warm up a bit.

I was home at around 3:30 and snacked on a Honey Crisp Apple with Almond Butter:

And then Romy and I made an awesome dinner at around 7. This is Tilapia with Amy’s Corn and Black Bean Salsa, an entire sweet potato sauteed in olive oil (and ketchup for dipping), and salad with a little bit of Annie’s Raspberry Vinaigrette dressing. YUM!

A very healthy day… ahh feeels soooo goood :)

Ok so now it’s time to evaluate my Goals for this past week. According to this, my goals were:

  • 20+ mins of constant movement 4 days Definitely accomplished this! I walked to work twice (35 mins each), ran on Thanksgiving, and got a good walk around NY in today which I will count as exercise
  • Dessert twice (thanksgiving and my Dad’s bday) Had it three times but that still beats last week! I am still happy with this.
  • Enjoying my family and planning activities to not get bored Definitely did a great job with this.

Overall, I think I did a pretty good job reaching my goals and I did enjoy having them to think about all week.

One nice thing about doing goals on a week-to-week basis is that I can take into consideration what I have going on each week. For instance, this week I will be in Mississippi for work on Wednesday and Thursday, so I will take that into account.

My goals for this week are:

  1. Try to replace my sweet, heavy desserts (ice cream, cake, pie, etc.) with healthier dessert options (oatmeal, peanut butter, dark chocolate, fruit)
  2. 20+ minutes of exercise 4 times
  3. Pack a few healthy snacks for when I travel this week

And that’s a wrap! I am still slightly hungry so may have to go make myself a healthy “dessert” so I will post about that in the morning if I do.

Have a great night!!

What are your goals for the week?? I’d love to hear!

A Thanksgiving Recap

Hi everyone!

Sorry for not posting yesterday but I do have a FULL recap ahead. It has been a very busy couple of days because I actually had to work a full day back in NY today so there has been a ton of back-and-forth commuting from CT to NY.

I left off after breakfast yesterday (Thurs) and mentioned I thought I would go for a run. Well I did! I only did about 1.5 miles though (on killer hills) because I stopped by two of my friends houses while out on the run to say hi. My town is tiny so its nice that we can do things like that.

Once home from the run, I was pretty hungry at around 1pm. I knew I wanted a good light lunch to hold me over until our Thanksgiving dinner at 5pm. I made myself a snackplate with green beans, carrots, mushrooms, tomatoes, sliced turkey and a sabra hummus mini pack. I also had some unpicture light honey mustard dressing on the side. It was  a perfect little meal.

Guests arrived at around 4pm and we all sat around and talked for an hour or so. One decision I made was to skip the appetizers. I wanted to be hungry for dinner and none of the appetizers were too too special. Instead, I sipped on a bottle of sparkling water and just talked my way through the first hour.

And then… the eating began. I decided to go for only what looked good to me. For instance, I wasn’t really excited about the turkey, so I only had one small piece on the side with some cranberry sauce. I LOVE veggies so I loaded up on those:

My thanksgiving meal:

  1. I started with unpictured homemade butternut squash soup with sauteed pears (AMAZING)
  2. Brussel Sprouts with toasted walnuts and dried cranberries
  3. Wild rice with shitake mushrooms
  4. Roasted sweet potato with walnuts and raisins
  5. Green beans with lemon and bread crumbs (they are hidden but I had a lot)
  6. Roasted apples and onions
  7. A cornbread muffin (I had two more of these throughout the night)
  8. A pumpkin cornbread muffin with raisins.
  9. One piece of turkey with cranberry sauce

Everything was delicious! Everyone in my family was assigned a recipe or two to make during the day. I made mashed potatoes with caramelized onions but didnt end up having any. They were a hit though!

It is my Dad’s birthday tomorrow so my Mom surprised him (as she does every year on Thanksgiving) with an adorable cake with some of his favorite things…wine..cheese…all made in chocolate.

I had to try all of the dessert. A thin slice of the cake, apple pie, pumpkin pie and blueberry/peach pie. I did not finish this plate though. I was feeling good and loving not being “stuffed”.

Then, it was time to clean. My sister and I took the lead and got most of it done. Cleaning for me = picking at the food before it is put away. I probably ate another half a plate of food just picking while everyone was standing around/cleaning. I think this is the most fun part of the meal :)

Anyway, at the end of the night I was full but definitely not stuffed. I was quite proud of myself!

—Friday—

I woke up at 6 to catch the train back to NY for work. I was planning on just waiting until hunger hit until I had breakfast. On the train, I started off with a grande starbucks with real half and half and 1 packet of sugar in the raw:

And about an hour later, broke into this:

At around 9am at work, I had a really great crunchy apple from home:

For lunch, we got a special allowance from my company since it was sort of a holiday. We walked over to Grand Central and I got a salad made from Hale and Hearty Soups. I also got a side of the most DELICIOUS hummus from Eat-A-Pita.

In the salad:

  • romaine
  • edamame
  • corn
  • tomatoes
  • carrots
  • mushrooms
  • celery
  • Low fat Raspberry Vinaigrette

I topped the salad with about HALF the container of hummus and smooshed it all together. I also enjoyed a couple bites of bread.

The afternoon was surprisingly busy and I got on a 5:40 train back to CT. I was really hungry by this time and we all sat down to leftovers. My plate:

More wild rice, green beans, brussell sprouts, muffins, little bit of turkey, apple/onion mixture. I also had two more cornbread muffins and a lot more from my beloved-picking technique as we cleaned up :)

So one of my goals was to have dessert only on Thanksgiving and tomorrow night (my dads bday) but I just really wanted leftover pie and cake tonight. I decided I could swap tonight for tomorrow night although we will have to wait and see about that.

I had a small slice of the apple pie, blueberry pie and chocolate cake.

And I am stuffed!! I think I am more full tonight than I was on actual Thanksgiving night! Tomorrow is my Dad’s birthday and our only job is do what he wants all day. Him and I are going to Bikram Yoga in the morning, then we are all taking a walk on the beach (in CT, in the cold, yea) and eating our lunch outside. Then, stopping by my aunt and uncles to say hi to my cousins, and dinner at one of our fav restaurants at night. Should be a great day! I am off to hang out with the parents some more. We are watching 40 year old virgin— forgot how funny it was. Night :)

Turkey Day Tradition

Happy Thanksgiving everyone!!

This morning I woke up at around 7:15 and was hunnngry. I lazily walked downstairs and greeted my Dad reading the paper in his usual  chair and my mom of course already prepping for dinner tonight. She is quite the entertainer!

Breakfast was immediate:

I was not in the mood for oats, but instead wanted to take advantage of all the fresh fruit we have in the house.

  • Almost a full container of 0f 0% Fage
  • Lots of berries: raspberries, blueberries, blackberries
  • 1/2 of a chopped apple
  • 2 small clementines
  • Drizzle of Agave Nectar
  • Spoonful of Strawberry Preserves
  • Spoonful of Better N Peanut Butter (my parents dont have the real thang… darn)

It was delish!! And then a mug of hot coffee with fat free half and half and a packet of sugar in the raw:

Yes that is a personalized Mug that my siblings and I got from my parents one year as a gift. That’s me in the middle, my older bro on the right (1 year older, he is 24) and my sis on the left (3 years younger, she is 20). We are all “cheers-ing” our wine when we were in Vermont celebrating my 21st birthday a couple years ago. I loved that trip, that day, and that picture!

I have already accomplished about 2 hours of work and now it is time to disconnect with the computer/work and go for a run or do some type of workout (haven’t decided yet). Every Thanksgiving, it has been a personal tradition to go for a run outside, but today it just looks SO gloomy, I may switch to an indoor workout.

I’ll be back tonight… have a great, balanced, fun, relaxing and enjoyable thanksgiving ;)

Chillin’ with the Fam

Hi guys! I hope everyone is at home enjoying their family and friends. I got off work an hour early and sprinted to Grand Central to catch a quick 56 minute train home to CT. My sis was waiting for me at the train station and now I am chilllin with the fam, blogging in front of our fire place :)

This morning, I woke up pretty hungry and knew that spinach oats were on the menu:

  • 1/3 cup oats, 1/3 cup almond milk, 2/3 cup water
  • 2 huge handfuls of spinach
  • 1/3 cup pumpkin
  • big scoop of almond butter, drizzle of honey
  • blackberries

At 11:30, it was lunch time! Another salad from the deli:

I switched it up a bit today:

  • romaine
  • mushrooms
  • celery
  • corn
  • almond slices
  • artichokes
  • balsamic vinegar + two big scoops of Sabra hummus

The usual Fuji apple with one of my many cans of club soda that I enjoy during the work day:

And a Banana Walnut Gnu Bar to hold me over until dinner:

My parents luckily eat suuupppper healthy (they are both on huge health kicks!) and so I knew I could count on a great balanced dinner:

Poached salmon, Trader Joes brown rice, steamed spinach and green beans. AHHHHH aint nothin like a home cooked meal!

I made myself a nice bowl of fruit salad for “dessert”. I also had some unpictured canteloupe (about 3/4 cup). My mom keeps the best fresh fruit in the house- I love it!

Now it is back to my family time… we are watching the Biggest Loser reunion. It is sooo inspiring and one of my favorite shows. One of my goals for the week was to make sure I had fun activities to keep me entertained while at home (I tend to get bored very easily). Some things on the agenda for tomorrow are:

- walk with my sister

- making a homemade card/present for my dad for his bday on Sat

- cooking two recipes for my Mom for our thanksgiving dinner (she put me in charge of two veggie dishes.. how appropriate!)

- a couple hours of work (not fun but itll feel good to get some done)

- **dinner with lots of family**

- GAME night which I am forcing everyone to partake in. I. LOVE. GAMES.

Have a Great and RELAXING night!!!

Almost Thanksgiving Time!

Almost there almost there almost there!! I am so excited to **pack** after this post to go home for Thanksgiving. I am taking the train back to CT after work tomorrow but then have to work on Friday so am coming BACK to the city early Friday morning and then back again to CT Friday after work. It is sort of annoying but what can ya do?

I did end up speed walking to work today for some good old exercise. About 2 miles, 40 minutes and lots of great tunes.

At 1:30, lunch time rolled around. I ordered a salad from the deli with:

  • romaine
  • cucumbers
  • tomatoes
  • mushrooms
  • cashews
  • balsamic vinegar
  • 2 large scoops of Sabra hummus

About an hour later, a large Granny Smith apple:

And at about 5:00, a Cashew Cookie LaraBar:

This morning I got up and prepped some roasted veggies first thing so that I could walk in the door from work at around 8:00 and have dinner already prepared. I was MUCH more at ease at work knowing that dinner was already prepped. It was a great strategy and I was sooo happy to have this meal ready when I walked in the door!

This morning, I roasted a ton of brussell sprouts, mushrooms, and butternut squash. I marinated them first in about 1 tablespoon of olive oil, 1/4 cup balsamic vinegar and a couple squirts of honey.

On the side, I had a container of Stoneyfield Pumpkin Pie yogurt and about 10 blackberrys. Also, some Annie’s Organic BBQ sauce for dipping.

I was also craving some leftover soup from last night, so had a mini bowl of that as well. Nothing wrong with craving nutritious lentil/beans/veggie soup!!

Today was a great day of eating food I truly love. Lots of veggies, oatmeal, peanut butter, larabars, apples, yummm..

I hope everyone has safe travels home for Thanksgiving and is enjoying the short week! I am off to clean clean clean this apartment and pack for tomorrow.

Goodnight!
